The Bâloise Gourmets with Explorator, or how to discover local food talent
The Bâloise Gourmets are honouring Luxembourg restaurants that are making waves in gastronomic circles. For July,, Bâloise Assurances Luxembourg and Explorator are delighted to take you to L'Annexe, run by François Moreau, who is passionate about his work and the art of hospitality. He offers a friendly, warm-hearted welcome.
Established in 2007 on the Saint-Esprit plateau, L'Annexe is a modern brasserie that revisits the classics and offers serious dining with fresh seasonal products. In sunny weather, the restaurant terrace offers an impressive view of Le Grund.
Julien Couléon, chef de cuisine at L'Annexe, has built his career in beautiful Luxembourg restaurants like Léa Linster and Le Bouquet Garni. On the menu right now are crumb-coated sardines, Parmesan panna cotta, yuzu pearls and fresh rocket, and fine-dining favourites like beef rump tataki, Thai vinaigrette, carrot and courgette spaghetti, lemon balm sprouts, and sesame seeds for the starters.
For main courses, the essentials include :
- Fresh goat-cheese cordon bleu with sun-dried tomatoes and honey
- Rossini bluefin tuna steak, sesame oil hummus, and mixed seasonal vegetables.
For desserts, pastry chef Dorian Molinan offers a sublime vanilla millefeuille, pickled mango and coulis, candied carrot chips and green tea jelly, as well as fresh strawberry and watermelon, and almond milk cream and raspberry coulis with vanilla oil pearls.
